Production notes

De-stemming, selection on sorting table. Slow fermentation at 27° C to 30° C with indigenous yeasts in stainless steel vats and oak vats (with punching down). Post fermentation maceration 15 to 20 Days. Malo-lactic fermentation in barrel and in vats. Aging; 12 months in barrel (15 % new barrels, 65 % one wine, 20 % in vats). Ageing on leas during 4 months

Tasting notes

The aging in barrels for sixteen months has resulted for the moment in an austere aspect. This wine thus appears surprisingly youthful, combining warm nuances of blackberry liqueur, cooked fruit and kirsch. It is dense, fat, with still tight tannins.
