Product notes
The original grape is Timorasso, a white grape variety that has found favorable soils and exposures on the hills around the town of Tortona, in the province of Alexandria, since the Middle Ages.
Production notes
After gentle crushing and a short period of cold maceration, the free-run must ferments at a temperature of 16 to 18°C to enhance the varietal aromas. Aging for several months on lees to improve the complexity and longevity of the product.
Tasting notes
Straw-colored yellow dress. Complex bouquet with floral notes of acacia and hawthorn, and ripe notes of peach and honey. Other mineral and flint notes are highlighted in the finish. Mineral and good acidity with persistence and texture. Pairings with seafood and fish
