The Paradella estate vineyard (8 ha) is located on an exceptional clay-limestone terroir at the foot of the limestone cliffs separating Patrimonio from the sea and giving the appellation its unique microclimate. 6 hectares are reserved for red wine (Niellucciu and Grenache) and 2 hectares for white wine (Vermentinu). It is mainly composed of Niellucciu (90%), relying on a small part of Grenache (10%) while respecting the appellation. Niellucciu (near San Giovese in Tuscany) finds here an exceptional terrain of expression which allows it to produce balanced and structured wines whose complexity is their richness. All viticultural work is carried out using a reasoned approach within the framework of a Patrimonio appellation which has banned glyphosate (organic conversion/certification in progress). The aim of this work is to obtain optimal maturity of the grapes while respecting the terroir and the vintage. The quest for this optimal phenolic maturity is the basis of the work in the vineyard. The harvest and sorting are rigorously carried out manually.
