Product notes
Made from Tempranillo and other grape varieties grown around the Benedictine monastery, in a vineyard planted in 1985, this iconic wine benefits from a Mediterranean climate, low-yielding vines, and limestone and gravelly soils, providing structure and complexity.
Production notes
The grapes, carefully selected just steps from the winery, are vinified with meticulous attention. The wine is then aged for 18 months in new French oak barrels, followed by an additional 6 months in 10,000-litre oak foudres in the monastery’s cellar. This type of ageing reduces contact with the wood, allows for longer refinement, softens the tannins, and limits oaky aromas. The result is a wine with round tannins, great complexity, and perfectly balanced fruit aromas.
Tasting notes
An iconic wine of the estate, this deep red displays a bright cherry color with purple hues. The nose is expressive and complex, combining black fruit compote, liquorice, balsamic oak, spices, and subtle milky and roasted notes. On the palate, the wine is intense, structured, and complex, while maintaining a pleasant freshness throughout. Rooted in historical heritage, it pairs beautifully with beef steaks, slow-cooked dishes, or game, paying tribute to the hunting tradition of the Sanz-Pastor family, the last residents of the estate before the founding of Barón de Ley. Recommended serving temperature: 16–18 °C.
