Product notes

The emblem of the Galuval estate, the rooster (from the Latin Gallus), twirls to the rhythm of the gusts of wind. The benefits of the Mistral wind have made the vines of our region prosper. This current naturally ventilates and purifies the bunches, then chases away the clouds to ensure perfect ripeness of the grapes. Coq Volant Blanc is inspired by Mistral and pays homage to it with a fresh, airy profile.

Production notes

In the winery, the bunches are poured into a vibrating conquet, then destemmed. Filled by gravity, small stainless steel vats (100hL) enable parcel-by-parcel vinification by grape variety. Gentle, regular pigeage (punching down of the cap) extracts color and silky tannins. Maceration on marc can last up to 3 weeks. Short ageing on wood to support the aromas.

Tasting notes

The Coq Volant is an ideal summer aperitif or meal accompaniment to a generous, colorful dish. Grilled pork loin with Espelette pepper or pan-fried red mullet with tomatoes, olives and basil.
