Product notes
The emblem of the Galuval estate, the rooster (from the Latin Gallus), twirls to the rhythm of the gusts of wind. The benefits of the Mistral wind have made the vines of our region prosper. This current naturally ventilates and purifies the bunches, then chases away the clouds to ensure perfect ripeness of the grapes. Coq Volant Blanc is inspired by Mistral and pays homage to it with a fresh, airy profile.
Production notes
Mechanical harvesting. Then follows a direct pressing. Only the heart of the press is retained. In vats, we carry out a cold settling (temperature 12°) to retain only the fine lees. Dry yeast and fermentation is carried out in thermo-regulated stainless steel tanks (14-18°C). We preserve the natural malic acid by blocking the malolactic fermentation. Stirring of the lees before racking and aging on fine lees. Then follows a very short maturation on fine lees in stainless steel tanks for 4 months.
Tasting notes
The color is golden yellow with green reflections. The nose develops complex aromas of white flowers, honeysuckle and lime blossom. The mouth is elegant and airy, it opens with a nice round attack, a fruity palate and a sustained freshness. An unexpectedly delicate signature for the region.
