Production notes

The harvest is sorted. It is placed in concrete vats for a traditional fermentation for three weeks. During maceration, the grapes undergo extraction extraction operations (pumping over and punching down). The harvest is then pressed. After malolactic fermentation, the wine is aged for eight to ten months in concrete tanks.
