About this winery
The history of Parusso family has evolved, from a family of farmers to a family of vintners, always taking the advice and values parents gave. Located in the heart of the Barolo district where the two types of soils, Tortonian and Elvezian, have formed hills which mingle and blend together in a perfect union. Temperature 16°C. PAIRINGS Warm appetizers, roasted white and red meat.
Production notes
HARVEST Grapes harvested by hand with the utmost care in small perforated baskets. VINIFICATION It takes place with the most modern technologies to enhance the qualities of freshness and fragrance. After destemming we proceed with a maceration in contact with the skins. Alcoholic fermentation occurs spontaneously with natural yeasts without the use of sulfites, with careful control of maceration time and temperature. MATURATION In contact with its indigenous yeasts for some months. AGING For some months in bottle at controlled temperature of 15°C.
Tasting notes
COLOR Brilliant, ruby red. PERFUME Floral, intense and wide. TASTE Elegant notes of fruit, flowers and spices pave the way for a sweet and fine tannin that makes it easily drinkable from the first months in the bottle.
