Selected grapes, manual harvest, gentle pressing in whole bunches, first fermentation at controlled temperature in stainless steel vats, partly malolactic depending on the vintage. Medium dusky pink in colour with delicate copper reflections, and a fine mousse. On the nose, an inviting bouquet, with delicate notes of cherry compote, peach, and a hint of red forest berry confit, with some blossom honey. The palate is juicy and elegant, with a fresh structure, white stone fruit, subtle red currant notes, and a saline finish, a minerally, well-balanced food wine.
